Report a translation problem
The settlers drink the "Rough Wine" as well as the "Finely Aged Wine", the letter gives a bonus their happiness.
"Vinegar" is not for eating but can be used to make pickled vegetables (if you have no salt) or you can just sell it to traders.
You can forbid settlers from eating certain types of food as well as drinking certain stuff, forgot the name of the tab, where you set their clothes and weapons too.
So if you want them to leave the rough wine alone to ferment on, just forbid them from drinking that.
Aging wine again is a bit of a hassle, and other stuff like mead and the distilled stuff gives a bonus too (even distilled "Dubious Booze" made from rotted vegetables^^), not sure if its the exact same bonus though would have to check that.
But given that Wine needs 30 days under very strictly controlled temperatures to finely age one or two points of happiness more aren't exactly worth that save for RPing a kind of vineyard settlement.
The only place I have found to do that is the Manage Food section of the MANAGE tab, but try as I might I can't find anything to do with drink under that heading!
'Manage Food' is the last one on the right, is there a hidden column I can't get to?

BTW I have two 19" 4:3 monitors side by side, great for serious work apart from games, and also for flight simulator.
