On the note of gore, I would like to see dismemberment on explosions and entry and exit wounds at least.
There are entry and exit wounds, they jsut aren't graphic, but rather decals. The entry point is smaller than the exit point as it should be.
What? Ghost Warrior Contacts 1 and 2 has full dismemberment and gore. No xrays though but it's a lot more messy and has better aftermaths than Sniper Elite games,
The Zombie Army games prove that Rebellion's engine already has the capability to do this, and those games have way, WAY more enemies per map than Sniper Elite does. This is not a technical limitation.

I agree with OP bring the carnage.
Is this for real or just a joke?
What is the format you type it in?
Having the corpse resemble the damage done to them during the xray would be awesome, and the lack of it is pretty annoying. It was probably just too difficult for them to pull off consistently.
