You can dodge out of practically any attack that you make, meaning even during a combo, you can get out of the way. A good practice for Inferno is to stay behind him as often as possible and simply wittle away at his HP. There's no rush to killing him as fast as possible if your only goal is to make it through the game.
His grab is telegraphed when he raises his hand into the air for a moment, but he *cannot* grab you if you're behind him.
The two biggest issues with the fight are when he's pushed to a wall, meaning you can't get behind him, and his floor-covering fire, but these aren't too bad. If you get him close to a wall, simply run closer to the other side of the room until he moves away, his attacks are easy to avoid from a distance, and may not even hit you at all depending on what he uses. His floor covering attack is very clearly telegraphed, and you need only stand on a table to avoid it.
Getting OFF the table after this floor-covering attack is over is a matter of jumping towards him and getting behind him again. An important thing to note if he shoots those fire globs: You CAN dodge mid-air. You don't cover as much distance, but it can save your life.
As for the issue of having the tanks blown up while they're in your hands, don't bother picking them up. They are in no way necessary to winning this fight, and evidently they're more of a hinderence. The same goes with the canisters at the top of the room, don't even worry about them. Worry about hitting the boss directly and avoiding his attacks.

You seem like a big fan of the game.
I wish I started playing it earlier, but I couldn't because of the glitch, which didn't allow my Nvidia GPU to run it.
But then I found out, that I had to config my integrated GPU to run it, and indeed it worked.
I used to speedrun it actively, and I still hold the world record for it, so I've at least got a little bit of knowledge about it :P

Although, I never played the first Shank. I started playing Shank 2 after my friend told me about the first Shank years ago.
