For Peel specifically, you can present him with all of the special interaction books in one visit, if you want, since he doesn't leave after looking at any of them; for the ones in which he takes the book and gives you something in exchange, the game text does tell you that you won't get the book back, and what you'll get in return.
For other Visitors, you should be able to give them all of their special books, but it may have to take place over multiple visits; as with Peel, the game text should specify if they'll stick around or leave, and whether or not you'll get the book back or if they're giving you something in exchange for it.
As best as I can tell, without testing each individual person, at no point does the game lock you out of special book interactions with guests; the only Visitor that can stop showing up (you must have the House of Light DLC and take a specific action for a specific Incident with this person to get them to stop coming, and they are the only Visitor for whom this change can occur) has no special book interactions.
