Keep doing the books you can do, and eventually you'll find skills that have Nectar as their primary or secondary.
I think a few Inks also have Nectar, so don't forget those as you explore the House.
Finally, even with only Health (though it'll be easier if you have more than one), you can still get it. If you do not have enough Nectar, you will randomly get three (at least I've only seen three) opportunities to add something else when you study . If you get the Soul one (for a second Health card) or a Thing one (there should be a ton of food, drinks, plants, etc lying around) or maybe a Mood one (there are different moods that boost different Aspects for free)- if you get like two of those, that should be enough to make up the difference.
But yes, Nectar seems intentionally hard, since it's all about being outdoors and you're trying to study it in a stuffy library. Not really any reason to torture yourself working on them. You don't really need Nectar much until you get pretty far in.
You mean start with rain and health, then wait for it to fail and hope you get the option to add the painting when it circles around again after the fail? I guess I'll try it. Thanks!
Also, if it gives you the option to add another soul bit after you fail, you can put in a 2nd Health for that final point of Nectar (presuming you have more than one Health-- I think I have 4 at this point, lol).
Well, I've just unlocked a quite small 'greater Gatehouse' so far and am already at three Health, so... for some reason the game keeps throwing more Sky Mysteries at me than any others combined, so that's what I'm predominantly occupied with now. I'm pretty sure I will get my Nectar - when I finally get around to looking for more :)

by considering or talking to the viper, you can capture the viper at beach or forest
you can get viper egg, then put it in a fire pit with a card to hatch it. then leave it for day in the house. then use it.
And then there is your Memory: Impulse
The real problem is if you selected the skill Rites of the Roots for the job. You lll have a bad time levelling it.
Level a nectar skill that has a common secondary attribute.
Im using the one with grail, since i have like at least 4 grail cards i can use for leveling, adding the 3 i gave you makes 7.
And like the other guy said, you get to crack the low level books with objects and weather as overtime addons.
If you get that to lvl 7 you can crack nectar books upto 12 on good weather and overtime addons.
And when you can muster 5 nectar in a window you can craft Yewgall ink = 2 nectar
(its crafted in the chemistry set) you prolly need a flower for it, the window tells you when you are close.
And then there is a whole bunch of craftable things that have nectar on em, but I never really used them.
If you wanna use double earth sign to crack a book.
Get it from viper. Let 1 day pass. Then put it in recipe, then get another from the viper to add as extra if you are lucky to need a memory again in the overtime.

as you can see you can make some without any nectar at all.
PS you can gather Pears from the practic garden during numa that are worth 4 nectar.
You can get more Yewgall Ink from Putrefactions and Calcinations with Prentice Winter.
There are a couple other nectar tools, actually!
There's a watering can in the librarian's room, and a mortar and pestle in the Motley Tower's dispensary.
In a pinch, if you have two health and a rain memory and a little luck, you can read your first nectar book.
1 memory + 1 health + rain (2 nectar) = 4. You can't use both memories to start with, but you have the opportunity to add 3 items in, and you might get the option to add a memory or weather.
Instead of Considering flowers (which uses them up), you can Consider the Watchful Potted Plant in the Infirmary, which does not get used up when Considered.
