Edit: I drank quite often from the lower sink and the option vanished, remaining in the upper sink; how come? Is there a limited supply of water? Does it restock each day?
Station sinks do refill slowly over time. It's a good source of water (if you have the hacking skill, you can use sinks in other "private" quarters around the station).
I have two sinks on my ship and a 8 liters jug. Whenever my sinks are low on water, I grab my 8 liter bottle, and visit every sink available in the station, grabbing every drop of water and filling my 8 liters bottle and then restock my sinks on the ship.
Using the "dispense water" is an option, but I prefer to open the sink inventory and with the bottle in my hands, transfer the water like you would transfer items on a backpack, for example. It's faster.
Boy, oh boy. Thanks a ton! I had no idea, this game just keeps on getting better (almost makes me feel like a criminal with monopoly on production of moonshine back in the day).
Also, you can buy water flasks on the cheap by trading with Bartenders. Something like 4000+ Credits for a full 8L flask if I remember the numbers correctly.
If you want an easier time, if I remember correctly, again, is to just make a zone over the sinks and sell the water in them from said zone from any shop in the area.
Thought I'd say you'd probably have more water after a few derelicts to never be in need to bother with neither having no water nor no money to buy said water.
Eventually I'm sure there will be a creepy-pasta water ailment.
