No pause menu or ESC menu
Am I blind? or ESC does nothing for me?

You mean in-game? You are probably in a modded lobby where the shi**y host disabled it, use steam overlay (shift+tab) and Exit Game

As he said! It also worked for me with alt+tab to minimize the game and then force it to close the game via steam client.
