How To Access In-Game Menu
The in-game menu is difficult to access without knowing the keyboard/controller mapping. Someone wrote a community guide on it:

PS4 Controller - LT, X to select and deselect
Keyboard - 1, Z and X to Select and deselect
Nintendo Switch Controller - ZL, A and B to select and deselect (?)
Xbox One Controller - LT, A and B to select and deselect
