When a wheel falls off, remember you can put it back on by grabbing it and holding it over the wheel well, then pressing "f".
The buggy feeling of the game is also on purpose, the devs are trying to maintain a "janky" feel to the game. Also, I don't see why something staying equipped while you're driving is buggy?
Wheels are more likely to get knocked off if you don't have hubcaps on.
You can stand next to your open door and select to push and steer from the steering wheel.
