Why does my car keep fliping over up side down every time I touch the steering wheel?
Is it because I put big wheels on it?
If so, how can the truck and the bus have big wheels and dont flip up side down?

The wheel size can really mess with the handling of a vehicle. In general the big tires are meant for the tankers and busses. I have found that putting big tires on a truck enable you to offroad better but on road you just flip like mad.

When you say "I have found that putting big tires on a truck enable you to offroad better" you mean on the small pickup truck (VW Caddy)?

Yea that small pickup truck. You can put bus tires on that thing and hit a rock and be fine. Going down hill faster than 70kph and you are for sure going to flip for miles and have to find the road again.

Its all about wheel base the bus and truck have wider wheel bases so they flip less in my experience the big wheels dont flip the sports car as much as the others

It's definitly the big wheels. I think they work okay on a barkas, but some skill needed there.
I think its pretty obvious as of why the busses and trucks can have bigger wheels without problems.
They pretty much need them, first, cause they scale with the size of the vehicle too, but on the other hand they're heavier, thicker, not so subseptible to rolling over in the first place. Theyre also slower.
You kinda have to try out some stuff. Big wheels give enormus Vmax at the cost of acceleration and stability in small cars but every car handles it differently..

I just started a new game and I decided to take a half full barrel and put it in my passenger seat. The steering is Fantastic! (for this game)

Putting the truck tires on the pickup will come with its issues. The biggest problem would be the center of gravity. As the truck tires add more ground clearance, it moves center of gravity up, making it less stable.

If you balance your cargo in a way that the heaviest objects are laying flat at the center of gravity, this can alleviate the problem somewhat.

Personally I'd ditch the truck tires entirely and go with the "stock ones". If you insist on having something to increase ground clearance the whitewall tires for the Plymouth are a good compromise.
