Report a translation problem
1) When I first started, I got a Beetle, and the darn thing would wobble all over the road, and if I dared to countersteer the car would do a high-speed 360, and all I could pray for is that I would not hit a pole. As I found out, my problem was the completely abhorrent condition of my tires, all of them were in a really poor condition, which I didn't even realize was an issue.
Solution: clean your tires, or find better ones. Your tires can be cleaned with the spray bottle, four spritz of it should improve the condition of a tire by one stage. Apply until you can clearly see text on the sidewall of a tire.
2) After switching out my Beetle for a Dacia, I was really happy at first. But then, as I was accumulating more distance, I became distressed by it. It had a really bad tendency to lose control from corrective movements, which I would quickly lose control over and the car would roll over. Badly. Eventually, I caved in and looked up guides on cars in this game. Apparently, the Dacia that I was driving had the softest suspension and most body roll out of every single sedan in this game.
Solution: swap out your car! You might have just gotten a bad draw of hand with your ride, and your car's suspension is actively trying to kill you. Just say "screw it" and build a rat rod out of some abandoned chassis, or swap for another abandoned vehicle. Transferring all the fluids should not be all that big of an issue, engine + rad you can just pour out of. Fuel can be handled either by siphoning off gas from your car with a hose into a jerry can, or simply saving up a small amount from all the stations that you come along.

Weirdly I noticed my Van "Barkas" behaving in the opposite way.
I switched to it from the car I hated the steering of.
I randomly cleaned my tires before I saw your answer and was kind of surprised to see, that it behaved exactly the other way. It had crappy tyres at first and steered beatifully handling 140 with a Playmouth engine well, but then with clean tyres it freaked out and wobbled again and every countersteer ended in a high speed 360.
I kinda also had no front grill on it so i installed a random obviously awkward looking one at the same time and dismounted it together with the clean tyres so i cant even tell if it was the tyres or the hood. Both options are kinda weird but without the hood and dirty tyres everything was good again.
But all in all I think ill dive a lil deeper into it too and see how different conditions affect driving :D
Thank you! For the Tyre subject I kinda made the opposite experience, but im still a noob. Idk what that was all about but when i had the Barkas with crappy tyres tt was awesome and then handled uncontrollably after tyre repais. But since people say thats the way it might just have been a bug or something idk.
In terms of sensitivity, my steering wheel is the most sensitive thing you can steer with in this game. 900° of rotation is a lot and i then turned the sensitivity even lower in the settings so even a good amount on the wheel is still just a sub 0.01 input.
The cars wobble by themselfes and countersteering some of these is just weird..
I was happy to find out that the trabant for example handled way better and its car related mostly since suspension seems to be the biggest factor
