Gold Bars ?
What are these gold bars for, are they some kind of not yet implemented currency that are for use with other (albeit rare) npcs so we can buy petrol or oil or that sort of thing, maybe to buy a different car like whats in one of the trailers for the game. Or are they just some kind of paper weight, should we be collecting them for an unknown reason

gold have no function, it is there just for fun, there is no merchant in game

can be useful for adding weight to the front end of rear engined vehicles to improve handling.
