Just figure it may be ideal to start on a fresh server in case I get into it and any competitive features that may now be in the game :)
Otherwise, maybe the latest server is fine?
The newest server (s 6) has opened on 21.10.2021.
New servers are opened by the devs based on population and not on a specific time frame.
The devs are especially focused to have a healthy population on a server and at the same time not have a big difference in progress between new players and "old" players.
A new start on server 6 is I think adequate
Certainly there will be a new server at some point, but for the moment there's no known date for it.

It means, that there are not enough ways for new players to catch up with older ones, and that this misbalance needs to be circimvented by creating a fresh start without touching the underlying issue.
There are certainly reasons to start on a server where everyone is already ahead, that would be the higher guilds and also the higher fellowships.
Where you get the chance to get high guild/fellowship bonuses as a newcomer, which has an immediate effect on the game and you level up much faster.
On the other side, as you already wrote, for many new players it's nicer to start somewhere where everyone has a similar level and there aren't big differences.
Unfortunately i can only say that there will be new servers, but i don't know when.

As was said, on servers that are not the newest one, player shortage becomes an increasing problem, that will hit even the top guilds rather sooner than later. Fellowships might be more difficult, as they are easier to reform and tend to have stricter requirements on high rating, but I doubt, you would not find a guild that is happy to pick you up on a server that's older than a year.
