Without the feature I would not get it because I don´t have people to play it with locally (non gamers).
Here are my observations:
People that connect to the host see host's screen and interact with his hardware - sharing the keyboard/mouse, using multiple controllers as if they were directly plugged into the host's PC. What you can or cannot do with this depends on each game and how it handles local multiplayer/coop.
One thing to note is that there is only one keyboard and mouse. As far as I know, there is no way to have two people on two keyboards (both using WASD for example). Only if you can bind keys to different parts of the same one keyboard. Same goes for mouse.
You can use the keyboard to play games like Worms where people take turns on the same keyboard. Or you can play games like Overcooked where you can have two people on one keyboard.
Remote Play Together is only for games that have the tag on the store page. Most of those with local multiplayer/shared screen do have this tag. There are exceptions, though. For example - Golf With Your Friends while having hot seat mode where people take turns on the same keyboard and mouse does NOT have this feature enabled for some reason. Therefore you cannot use it with that game.
But there is a program called Parsec that allows what Remote Play Together does, but it works for literally every game/program you can think of. So things like emulators can be played "online" using this program and again, it works great as long as the internet connection is stable and upload of the host is decent.

i have the same issue with just being able to invite one person now. I tried it some days ago with 2 friends and it worked fine, now I cannot add more than one friend and i tried it also via the friends list. very annoying to be honest. it worked actually pretty good.
