Is there a reason to skin enemies
I found the skinning knife on my second playthrough and i dont know if skinning an enemy does anything

It gives you skins. Not sure all of the uses, but I've found recipes that use the skins for armor.

If you got the assassin's handbook I, you learn a recipe for making disguises. For example, you can make a guard disguises making it so they ignore you instead of chasing you when you wear it.

Certain enemies can be skinned for their meat.

You can skin Salmonsnake in every part you can interact with for a total of I think 6 salmonsnake meat, you can eat it raw and I think it restores 30 hunger each which is insane.
