Its sad, really, because if the game wants to lean towards a buffet, then the customers should pay up front with a cashier. They could also get a drink of their choice before sitting down. Right now the game feels as rushed as the player is.
Unless there has been an update recently, this is not the case. The day doesn't actually "start" until you open. You have an infinite amount of time before you actually open the restaurant, and after you close.
Sorry for any confusion. From the time you open the restaurant, to closing time, its about two to three minutes, depending on the number of customers. To date, I've only had 8-14 customers per day. I've found that having two dishes out increases the number a bit, and I have some customers that come in during the evening.
