In other games unity usually at least provides me the typical 16:10 (1280x800) and 16:9 ratio (1280x720) although I do remember that a recent early access game called Zeal also had a similar problem. I do know a way around this using startup commands (although I have yet to try it on this game yet, I'll try it later when i feel like it) but the average player doesn't even know how to operate startup commands (Then again the average player doesn't use such a bizarre screen resolution ratio)
A simple solution you could try is to make the interface at least 4:3 friendly (most of the important stuff won't get cut off on 5:4 screens) and have the graphics options allow custom numerical entry and a seperate fullscreen checkbox.
