It's a sword which has bad range (due to it being a one- handed length but used with a two- handed hilt), it usually has only one edge (which honestly I don't think even matters), and its hand protection is laughable.
But, when paired against other combatants using the same type of sword, those disadvantages kinda just even out. And many katana techniques developed to work with, not against, the sword's design. Plus, Europeans generally revered the Japanese for their swordsmanship. And katanas were often times beautiful swords with amazing cutting ability.
Like you say, these swords are just sharp bars of steel at the end of the day which serve to protect you and kill the opponent. It's not like every single European sword had an amazing build quality or tons of hand protection either.

Nah, Japanese blacksmiths had to make do with the ♥♥♥♥♥♥ steel their had. Its why katanas were overly stiff and shattered/snapped instead of bending. In the context of Japan, the katana was mostly used for dueling or killing unarmoured civilians, that it was perfect at.
Youre aware a rapier can take on a longsword right just fine in real life right? A rapier isnt like a fencing foil, historically rapiers had a decent amount of weight to them.
