When you have time to work on it, I'd be happy to help you come up with ideas. I don't know how to mod the game, yet, but I'd like to get involved with that, at some point. I don't have a lot of experience with modding, in general, though...The only game I've modded successfully, so far,

Noodles/pasta, dashi, Chinese dumplings and meat-rolls, egg dishes, meatballs/meatloaf, stuffed fishes, shellfish/crustaceans, different types of raw meat, from different animals, salted/smoked meats, lots of different jerkey/dried meats, dairy products!
Hot peppers and other spices, soy-sauce-equivalents, dishes that use alcoholic beverages as ingredients, PICKLED VEGGIES! To name just a few of the veggies that seem like they'd fit the theme of the game, and--I'm just guessing!--ought to do fine in the climate:
That Tsukemono sounds promising.
