Disable Dynamic Resolution
The first thing you can do if you have some performance overhead is disable dynamic resolution. To do this simple go to the VR Settings whilst in game and simply uncheck the box as in the picture below.

Performance cost: Seems low on my end but this may vary from rig to rig.
Increase Supersampling
Option One:
There are two ways to increase supersampling, one is to simply increase it in game in the VR Settings area as pictured below. The further right this is the higher the supersampling and the sharper everything will look, though the more demanding.

Option 2 (my preffered way):
The second way to increase supersampling is using the in built steam vr function. To do this in your steam library first open SteamVR which you will find under apps. When it is open click in the top right hand side of the small window that opens towards the bottom of the screen as pictured below and click on Settings.

The once in settings go to Applications and as pictured below select The Elder Scrolls V: Skyrim VR, then simply increase the bar below to the desired amount of super sampling. As before the further right this is the higher the supersampling and the sharper everything will look, though the more demanding.

Performance Cost: High. If you are having any performance issues I would recommend dialling this back, even to one with the below tweak looks nice and sharp given current headset limitations.
Increase TAA Sharpening.
Many have recommended disabling TAA, but found that to create a lot of nasty looking noise in the form of jaggies. The solution I have come up with this is to increase the TAA sharpening level (which some other games let you change in game, though here it will have to sadly be done outside of the game).

To begin you will want to download the Skyrim VR Tweaker at the below link:
https://www.nexusmods.com/skyrimspecialedition/mods/16242

Once you have downloaded this simply extract the file and tun it. Once open in the filter area type in taa as shown below.

Next look down the list untill you see fTAASharpen as highlighted in the above picture and increase this from the default value of 1.0000. I myself changed this to 5.000, but you can change it to whatever suites you best.

Performance Impact: As far as I can tell there is no performance impact with this simple and easy tweak.
and Most Importantly
Enjoy the game, in this all new way of experiencing it. :)

For people looking for the Supersampling option 2: it's no longer in it's own Applications menu under settings. You can now find it under Video settings, as a button for "PER-APPLICATION VIDEO SETTINGS".

How the FK are you able to turn on the VR Tweaker?

You cannot adjust supersampling in the settings anymore so this isn't working for me. I can't find "applications" anywhere in steam vr.
