My personal favourite: Carrot Cake (easy to adapt to GF by just swapping flour :D):
Preheat your oven to 180°c. In a large bowl add 1 ½ cups of plain flour, ¾ a cup of sugar (a mix of brown and white is good), ½ teaspoon cinnamon, teaspoon of baking powder and a pinch of salt mix until there’s no lumps of sugar. Then add 3 cups of grated carrot, mixing until the dry mixture has coated the carrots. Then add 3 eggs and mix until it becomes a thick batter. Pour into a well buttered tin and cook for around an hour. Top with a good helping of cream cheese icing and enjoy!
