100% recommend GG -S- to people new and old to fighting games, face level value the game is simple and pretty linear and you'll definitely have fun. One of the few games I can personally say the lore is so fun to read I would read it again, not only that, the characters of GuiltyGear are so unique, there is always something for someone. It's only a game like this where you’ll see a Black vampire samurai whose mentor and saviour is a Scottish Vampire named after the metal band, Slayer. Or an Irish immortal omnipotent founder of magic man who chooses to use revolvers instead of magic, there is genuinely so much more but it's better off you explore into it. This is just scratching the surface of the series lore

Outside of the lore if you're new to Fighting Games or unfamiliar with the Universal mechanics of GuiltyGear here's a bit of info to help you understand and get you started.

If you're new to fighting games as a whole I would recommend starting at Learning the genuine universal basics of the genre. The Neutral (where neither of you are at your win condition) and Footsies (where you're aiming to call out, pressure or poke the opponent). And once you fully understand those, start to learn the unique Universal mechanics: Tension and Burst. How to use Tension for things like RomenCancel(Red/Blue/Purple/Yellow), Supers and FaultlessDefence. The usage of Burst metre for either BlueBurst and GoldBurst.
Later down the line you can optimise your usage of both metres to make unique interactions/combos with the deeper mechanics like RCdrift, RCcancel and WildAssult to craft lengthy and damaging combos that enforce your win condition, or get out of hard to block situations with a well timed FD/DeflectShield There are a lot more mechanics to learn in strive if you're looking to become advanced, so definitely look into videos where they explain every element of the game.

Its worth the experience. Me learning my first ever combo in practice mode is something ill always remember and actually managing to do it versus an actual person was even more memorable. I hope you will make memories and friends out of this game like I am.
