A few other people have complained about the Spanish grave stones. They were written by a native speaker (which doesn't excuse them if they're bad). Same with the Russian and the Japanese and Chinese ones. The Asian gravestones sadly have a bug that keeps popping up and keeping them from displaying at all! So, they're blank by accident.
As for the gravestones that you can't interact with, I'd love it if you could let me know which ones those are. All the graves should be interactable at the very least. If they're not, well, that's just terrible and indeed my bad.
The Inygo Montoya grave like most joke graves were a backer reward. I think it's cute!
