There's more into Vegeta's speech if you think about it. He's mad at Zamasu (In Goku's body) for using a saiyan body as a tool and not truly for the thirst of battle. He shows Zamasu that saiyans aren't some ordinary tools that are suppose to be used and thrown away. Instead, Vegeta tells Zamasu that only a true saiyan like Son Goku are allowed to use his body, and not some other cowardly trash that are allowed to use the saiyan cells at all. Zamasu disrespects the saiyan race, and Vegeta gives him an ass beating showing the saiyans are the greatest warrior race that has ever existed. It would also explain why Vegeta cried when Frieza killed him, Frieza made the ultimate insult to his pride and warrior race, as if the saiyans weren't anything special or worthy to be in the universe.
