2 c all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda or substitute 1 1/2 tsp baking powder for these
1/2 tsp
1/4 c butter
1/2 c to 2/3 c milk

Heat oven to 425F.

Grease a large baking sheet. Sift dry ingredients together. Finely cut in the butter. Make a well in the center. Pour in milk and mix gently to form a soft, but not sticky dough. Add more milk if necessary.

Shape the dough into a ball, then turn it out onto a lightly floured surface and knead lightly. Be careful not to overwork. Roll out the ball into a disc roughly 1/2 inch in thickness. Brush the top with milk.

Cut into desired number of slices (8 recommended) and place on baking sheet. Bake for 10-12 minutes until lightly browned. The bottom will brown more quickly, so be careful when cooking longer.

Serve with jam, and heavy cream if available.
