I don't see why not? It's already released for PC, Mac, PS3 and IOS. An Android and/or Linux port would enable the game to be sold in Humble bundles and on the Steam Box.
The game has already been in Telltale Humble Bundle, and they didn't bother with a Linux port for it. They didn't bother with a Linux port for any of the Telltale games in that bundle.
Telltale also isn't known for bugfixing and porting games that have been released. They work in a kind of linear manner -
1) Get a license for a known series
2) Make a game world and characters for that series
3) Make episode one, release
4) Make episode two, release
.....
5) Repeat until all episodes are released
6) Move the ♥♥♥♥ on to the next licensed series.

It's quite rare for them to skip the "licensed series" part, and they don't deviate from the rest of it at all, ever.
That is simply not true. Mac support were added to several titles. Tales of Monkey Island was released in 2009, but the latest port is from 2012. Sam & Max: Season One was finished in 2007, but it's latest port is from 2009. Season Two was finished in 2008, but the latest port is from 2012. Strong Bad came out in 2008, but the latest port is from 2011.

As for the Telltale Humble Bundle, you have to bear in mind that it was a Humble Weekly Bundle. The rules for those are different and usually doesn't sell quite as well as the Humble Indie Bundles. It might be in their interest to include some of their titles in one of those eventually.

I acknowledge defeat in this argument, and would be really glad myself if these games were ported to Linux.
I've love to see this and other Telltale games on Linux. It seems like there's good support (dare I say demand?) for point and click games on Linux - ScummVM works brilliantly on Linux; Double Fine are supporting Linux; The Journey Down; Fester Mudd. Sadly it doesn't seem like we'll see any of the Daedalic stuff on Linux.
Daedalic was surprisingly (and pleasantly) quick to support Linux after Visionaire added Linux support.

I would love to see Hector get ported to Linux but sadly I don't see it happening anytime soon. I'd love to be proven wrong though.
