This is where the horse running animations are stored:
Steam\SteamApps\common\skyrim\data\meshes\actors\horse\animations
The safest way to go about this would be to look at the files in the folder you downloaded and make sure you're deleting all of the files that came with the mod. (Unless you have installed any other horse animation mods that are working, you can probably just delete the folder listed above).
The correct animations are stored in the Skyrim - Animations.bsa, and the game will default to those once the new versions are gone from you Data folder.
The last piece of advice would be to use a mod manager of some sort in the future.
It will make this process much easier.

The "real" animations are stored in the BSA so you won't lose them (just don't mess with the BSA).
I was under the impression from your discription that you had downloaded loose files. If that's not the case, see below.
If you got the mod from Workshop, there will be a plugin and a BSA. you can remove the mod by unsubscribing, then go to your Launcher, go to Data Files, find the plugin for the mod and highlight it and hit Delete Selected in the Launcher window. That should take care of it.
