It's Skyrim, get used to it.
Oh, yeah, there is a mod that introduces new 'stabbing' motions, but It looks awful man, and the weapons aren't alligned correctly in the character's hands etc...so, I'd just look for another game if you don't like Skyrim.
The thing is that I've already played the story through twice and I'm searching for something to motivate me for a third playthrough...and the thing that annoys me most is the dull combat system (don't know why it didn't annoy me as much in previous elder scrolls games, but in Skyrim it really strikes me hard^^...maybe because I was expecting some improvement before it released).
Hmm, to be honest, once you have played all the others...you will really come to appreciate just how good Skyrim is in this respect. Sure, it will always be a little hack n slash but apart from the odd kill-cam, thank GOD there are no cinematics ...like some other games I can think of. <shudders>
Seriously, I recommend that if you are bored, go play Morrowind or Oblivion...then Skyrim again. You'll change your opinion of the combat physics then.
btw: I liked the cutscenes^^
I guess I'm more forgiving towards Morrowind considering its age. Despite that it still is kind of an old pearl :)

I am playing with more challenging environmental mods. Frostfall mainly, making the cold something to have to take into consideration...this is a good mod to spice it up :)
It doesn't alter how combat works, but makes it far flashier and more enjoyable.
Deadly Combat or Duel Combat Realism might be what you're looking for. However, I thought both get rather tedious after a while.
There's also Skyre, which is a complete overhaul and alters ALOT of things. If you're using many mods like me, you may want to stay away from it. It's script-heavy and still has several compatibilty issues.
