Is there a reason (lore or whatnot) why Gargoyles and Ash Spawn carry ores?
I mean, other than 'because it's quite nice to have a new source of free ore other than mining', obv?

They're made out of it. Like getting meats from animals maybe.

Clearly, it has been too long since I've played this game...I don't remember either of those creatures.

They're both in DLC - Gargoyles are Dawnguard, Ash Spawn are Dragonborn. Hmm, I could certainly see the Gargoyles might have chunks of ore in them (being sort of stone), the Ash Spawn seem a bit less likely, but then the Ash Spawn in general are Creepy And Wrong, so I suppose having weird loot isn't entirely out of keeping with that.

I don't think it's too big a stretch to assume that there might be little chunks of ore buried in the ash from which the Spawn are made.

Quite possible. Since they are formed of ash that is from a volcano. Said volcano, if I remember right, either had been dorment for a long time or appeared quickly. also if the buried/melted settlements, the wood and other material would have burned away. Leaving metal slag that in game terms could be used as ore.
