I know it sounds crazy but ENB's really add to the games feel
mmm!! "Immersive Creatures" will add additional types of enemies to the game (although none as funny as the train-dragons).
My top 5 or so recommendations off the top of my head for just general stuff:
Coin Replacer Redux < my favorite mod for skyrim, removes septims from dungeons and adds in lore friendly coins for the ancient nords and the dwemer to collect
Individualised Shout Cooldowns
Moonlight Tales - werebeast encounters, playable werebear, set your werewolf skin, turn and manage your followers as werebeasts
Burn Shock Freeze Effects - spells and weapon enchants show visibly on the corpses
Artifact Overhaul - makes them a lot more unique and useful, daedric items and other uniques
BONUS : SEM Skyrim Encumbrance Mod (if it bugged you like it did me that you could carry everything until you just stopped moving)
For some of my other top mods
Konahriks Accoutrements - Quests and outfits for the dragon priests
Alternate Death Senarios - if youd like a lore friendly way to fail XD
Deadly Dragons - makes dragons more unique and challenging
Random Alternate start - so you dont have to redo helgen if you dont want
Ezes World Map - allows you to fly around the map at any angle and get very close to it
I also recommend these world enhancing mods just to make skyrim a bit more vibrant:
Skyrim Floral Overhaul
Enhanced Lights and FX
Expanded towns and cities
Climates of Tamerial (and weather patch)
ImpREAL unique falkreath
Also make sure you have SKSE, SkyUI for the mod configuration menu (if you dont want the other stuff you can also install SkyUI-Away) and Id recommend grabbing either Wrye Bash or Mod Organiser to help with load order.

Thank you for including so much information about these mods, a lot of them seem like ones I will have to check out, especially the dragon priest one. Ah the wonders of modding games
If youd like some more mods of a specific purpose, armor, weapons, magic, quests etc i have a tonne more i could recommend for each, I was just trying to keep the above list short.
Skyrim GEMS really is a great resource though
Also forgot to mention that make sure you get the Unoffical Patches as well.
There should be no compatibility issues between them, if you decide the include each and every one of them.
