Housecarl missing
So there was a giant outside my house.... and.. I ran into a problem as a result.

Every time I don't die... it sends my housecarl to the moon... and he doesn't come back after a save and reload.

...so is there a way to get him back or is he gone for good?

(I'm level 5, so "kill it before it does that" isn't an option)

Yea, so Giants typically do that. Your housecarl is dead. They have ascended into their respective plane of Aetherius. They are an ex-human. I'm sorry for your loss. I'll send you flowers. My best wishes to their grieving family.

If you wish to get rid of those random attacks (presume you are talking about one of the Hearthfire homes - Lakewood Manor?), you can try this mod:

Hearthfire attacks disabled by Raygereio - http://www.nexusmods.com/skyrim/mods/41579/?

Have used it for over 1000 hours with no problems.

I kinda like the attacks... I just thought that housecarls were immortal since you cannot buy chickens or cows without them

Yes, followers can die. They're just protected meaning that in a normal fight once they reach a certain threshold, they will go down on one knee and the enemy will ignore them. But if they get a big enough hit, like a Giant sending them into orbit, they can be killed. They can also be killed by the player accidentally damaging them when their hit points are too low.
