Hey, Is there a way to add more survivors on a Local Server?

I think it would be cool if I could make a local server and have more than just 3 people join. Bot only survivors is fine too. As long as they follow me.

Another, Is there a way in local servers or single player to change survivor?
Example, Change Nick into zoey, or coach into bill.

Cuz I see modded servers do it, so was curious if a local could too.
