Removing fps cap?
Just wondering if/how I can remove or at least raise the fps cap from 300. I know people can't see the difference after some point, but I still want to.

The existing cvar responsible for that is locked. There a plugin for unlocking it (google for further questions), so you'll need -insecure to run it anyway, unless you play l4d one.
And it's not about people, it's more about monitor frequency. No such monitors so far, that could show more than 120 fps, never mind 300.

Your statement concerning the cvar/plugin may be true (I do not know), but there are now monitors designed with gaming in mind that operate at 144hz native and also I have seen televisions that are 600hz. Perhaps the OP should turn up some graphical settings so as not to hit the frame cap, but it sounds like you want to see just how fast your machine can run wide open.

Pretty much that... already have the graphics settings all the way up, it's just curiousity at this point.
