What constitutes stealing?
How do I know if I'm stealing something or not? For example, do I need to be within the confines of a house, or could stealing from an NPC's "yard" get me in trouble? A radius from the dwelling?
Is this actually well-defined, or is it just iffy?

Don't take things from close to people's houses.

Most NPC's will agro if you they see you take owned stuff or touch their crops. There are also stuff you can take without repercussion too (like everything in and around granpa's house and Ida's field) but there is no way of knowing if something is considered owned or not so you should assume everything is owned and make save before taking anything (be aware that even accidentially clicking crop in field is considered stealing and will cause agro).

You are free to take everything as long as no one spots you do it though and there are forget crime scrolls for pacifying hostile NPC's.
