Dialog choices that make you a liar or rude. For example, lie about your profession when introducing yourself.
Create the armor and then refuse Andvari's request that you boast about it in taverns OR promise and then don't do it. I don't know which of these reduce honor more.
Start the Liff/Lithrasir quest and then ruin their relationship like Warlock said.
Maybe trigger the battle of Munarvagir and then sneak out of the town and don't do anything to help?
Steal the key to Helgi grave and rob his grave.
Check out the Warrior 500 Walkthrough by tweak, wherever it says HONOR, try to do the opposite of what it says.
Let us know how it turns out, there's no complete guide to get this achievement or the 100 honor one yet.
While I did do some of the things you suggested (lying, making fun of people, ruining Liff & Lithrasir's relationship, robbing Helgi's grave), there might still be a few things to try.
When I get some more playtime next week, I'll see if I can try out the Battle of Munavargir scenario.
Also, I didn't try getting the Dragonscale armor from Andvari at all on my last run.
I wonder which sidequests GIVE honor if you complete them; this is why I usually hate hidden stats. If it was visible at least we could test which actions add to it/deduct from it.

Personally, I tested this game so many times prior to release, and I never ever got a 100 score, let alone 100 honor! I was always missing something :P
The 2nd hardest is probably Loki's trickster since it seems to be bugged even after doing everything I was supposed to, for me at least.
PS: As for the 100 honor, I'd still like to question someone who got it, what he said when talking to Jarl and the Norns. The correct answer is very doubtful on those.
Most of them several times. I even stole an apple from Heime...
I kept separate saves from all chapters, but I left most quests completely untouched till Chapter 3 so I could over what is honorable and what is not before stealing the Eyes. If I ever get the right(wrong?) order of things I may consider doing a guide of these notes that are piling up next to the keyboard.
Example: stealing the bracelet from Eitri is a part of the B&Es, so it's dishonorable, but using the bracelet to win Snorri's challenge is not; even though you're cheating, you're completing a quest that amps your honor with the citizens.
Completely unrelated note: mad props for all the easter eggs in this game. I keep finding them EVERYWHERE, even after playing the game with all three characters at least once. Paypal on your way, ladies and gents. It's a crime to play this game for free.
