KA2 is unsalvageable, The KA1 dlcs are fun little add-ons, but don't really add much content. Better to trade the collection key, and just buy all the KA1 DLCs for pennies when they're on sale.
The DLC for the first game expands things quite a bit. The Druids and Saxons games each added a new sandbox style of game into the campaign - one focusing on the Druids and their tech tree and story line and the other on the Saxons; its more sandbox/mission free than the Core game campaign which is more scripted. (you still have scripted events and such in the expansions but how you win and what you do is more left up to yourself).
They are both worthwhile DLC addons worth getting in my opinion. The other DLC is less core and is mostly just items/equipment - neat but not worth having; however that you get it all in the bundle allows you have the complete experience without missing out on anything.
I would say its worth while installing the complete version if you don't have the DLC for your current copy.
