The challenge at this time is either a) building out a concept prison, b) getting a functional medium or large prison, c) getting a prison and keeping it running with a large or diverse mix of prisoner types, so on and so forth.
If you haven't had an issue with a prison, try building bigger/more complicated/more inmates and see how it goes.
I think you're forgetting that there are different difficulties and various ways to setup your prison and different regimes to employ and the ability to use cheats and mods. To simply state that this game is easy without stating the conditions is misleading.

just keep at it , more you play the more you will learn. maybe you just need some more guards?
