As far as I know you can only play mapsets without code change with ECWolf.
I can understand dos box is a pain when you don't have the configuration for but the SDL mods runs pretty well on almost every machine.

And yeah I think ECwolf has some mods for it. If you only want ECwolf mods, you can check Operation Serpent. It looks pretty good but I don't know if it's still in development or if it's released
EDIT: after checking the ECwolf website, there is only 2 mods for it (and Operation Serpent is not released yet).
on orginal wolfensten 3d i use arrow keys but i think its better to use wasd and the mouse for this game. and wolfenstein 3d dont have a map :( the ecwolf have it
I use ws to move, q to run, e to use, right click mouse to straff and left click to shot (and of course the mouse to turne) but yeah I agree with you playing with a map is cool.
And about the mods you found, they are the only mods available for ECwolf at the moment but again, you can also play mapsets you find with ECwolf as long as they doesn't have code changes.
