How to use sword and shield with create a character

This is probably really obvious but I can't figure this out, is there a way to create a custom character using a sword and a shield or only one or the other?

You can equip characters with any Mithril items you've got. Whether they will carry/fight with both at the same time I don't know. The character builder, as far as I can remember, doesn't have both (but I might be wrong).
