Isaac uses Christianity as a catalyst for something else rather than that being the focus of the story, so "moving on" to a new religion for a sequel or whatever would seem a bit weird to me.

Even ignoring all the other problems with what you said, "Binding of Ishmael" just doesn't have the same ring to it, and since it was Ishmael and not Isaac Abraham was to sacrifice in the Islamic version of the myth, it would have to be changed as such to be accurate. But then I suppose if we go with your suggestions we would already be throwing out the whole accuracy thing, so what's one more thing?
