Regarding your questions, for the part concerning the specificities of the civilization it would be coherent that the benefits are in connection with the time of the civilization Breton and therefore I think that keep a building as well as the maintenance bonus for the units naval is a good thing. Adding a third crop bonus for exploited marine resources would not hurt.
(Brittany being very close to British and French culture because of its history, so a specific naval unit would be a good thing in my opinion replacing the PRIVATEER for example).

Quick question: What should be the formal name of the civ? "Duchy of Brittany" sounds a bit antiquated. Is there a better name?

Well even if it seems a little old, the time when it was independent Brittany was a Duchy (which Anne of Brittany is probably the most famous leader) so I think it's good like that.

For music I have what it takes for war how can I send you that?
And maybe we should put the music of the civilization celt for the peace and the one that I will send you for the war because it is bagad (of the Celtic music) so it is typical but in the long run the bagpipe it can be a pain for those who are not used ^^
There is music with this mod. Have you heard it? If you have the mod downloaded, you can probably use Windows Explorer to navigate to some place like:
C:\Users\XXXX\Documents\My Games\Sid Meier's Civilization 5\MODS\Duchy of Brittany (v 1)\XML\Leaders
And play those songs using Media Player.
For the ships the carrack is very representative of what Brittany used in particular one one which was called La Cordelière
The difference is that the carrack is a warship that protected merchant ships from pirates while the caravel was a ship for exploration including in America.
So to make it a unique unit for Brittany (even if more or less all the European nations of the time had).
For the tech required, take the same thing as the caravel.

We have two Unique Abilities (Traits) to look at, one from this mod, the other from Gedemo's mod.
Breton Freedom.
- Units fight at full Strength even when damaged.
- Naval unit maintenance reduced 25%.
- Receive two times as much Gold when capturing a City.
Kentoc'h mervel
- Get culture from maritime resources,
- Cost production for sea combat unit reduced 15%
Personally, I'd recommend using this mod's Trait, but instead of extra gold for city capture, use your suggestion, we do one of these two:
1. +X Food (or Culture/Faith/Gold/Production/Science) on Fishing boats.
2. Additional Food (or Culture/Faith/Gold/Production/Science) on all sea resources
