You need a tailor for that. However, the hats seem to revert back when you leave and enter your ship.

You can't give things to them directly so that each one will wear only what you give them, if that's what you mean with that question. They will either wear their specific outfits or a single uniform (changes colors according to their role) that you can set at your tailor. Once you get a tailor, everytime you talk to them they ask if you'd like you're whole crew to wear everything you're wearing (notice that this is only cosmetic).

Getting a tailor is just like getting any other role if you don't have the job application mod: clear quests for NPCs and hope that someone will become recruitable as a role you don't have yet.

he makes the uniform depending what you wear and after accepting his offer he changes the crew
so if you want them dont look like you then you need to be in their costumes in a moment and use tailor to set it as uniform

You don't have to be wearing anything else to revert back to what the tailor calls the Protectorate uniform. He/she will ask if you want to revert back whenever you talk to them again after changing the crew's uniform to what you're wearing.

I never had crew members without the mod that adds role specific uniforms, but I think I know where you're getting at. Just set something more "formal" or "professional" if you will as the crew uniform, I guess. Or perhaps suggest the modders behind these crew mods to add the ability to manage uniforms according to roles, so that you can choose what each role will wear instead of having everyone wearing what you're wearing. That seems like a lot of work, however, but maybe they can and are interested in doing it if it's possible. I personally think it'd be an interesting addition.
