You need to spend day 2 evening with her. Also I edited Ulyana's decision map so now flag name should be correct.

I've looked through the flowcharts and I cant see how to get the Semyon 7DS endings, the tier 5 endings.

Hoping someone can help

It's not in the flowcharts but in the Guides doc at the bottom. There's very little branching in that route so we decided not to make a flowchart for it

- Don't you wanna try something new?
- Hide inside
- No, Lena isn't guilty
- Find Olya
- To go look for answers (Choose “Not to risk it” if you want neutral ending)
I don't have any other options -> Good ending
There must be another solution! -> True ending

When it says track Ulyana what is it refering to?

These are choices you need to make to get certain endings when you're already on the route. If your initial question was about how to get on the route then you need to:
Assemble heart-puzzle (Get all the girls' true endings)
Get Semyon-Loner true endings
Start new game
