Demo may be considered lower versatility however, given the premise that his spectrum of abilities is lesser than that of an Engineer's in terms of potential. Demo is also more vital and a lack of a "frontline presence" can be more dangerous as he's a core class.
Perhaps Demoman isn't the best example, because stickies and grenades (not to mention his other loadout options) are very versatile, but I think you get my question.
