About the Rough Sea Conditions Depth, these days I'm playing the GWX-KC 2.0 Mod, and I found the Document about the LSH3 Mod file (Realism- and Gameplay-Related Hardcode Fixes for SH3.EXE)
You can find the information in [18. Torpedo Failure Fix]. Very detailed.
I don't know if the TWoS Mod has the torpedo failure simulation, maybe it has.

From my understanding;
Depth 1 is used for Impact and Depth 2 is used for Magnetic Torpedo Pistol settings.
And this is used for the Minimum depth that the torpedo needs to be set at to ensure the sea condition does not adversely effect it - such as affecting its course or causing premature detonation.
So for example, we know Magnetic Pistols are generally unreliable really prone to malfunction in rough sea conditions, so therefore it makes sense to use a good amount of depth to compensate for the waves, so with wind speeds reaching say 8 meters per second, we need to have at least 3.2 meters set to ensure the waves won't affect it and cause a premature detonation.
For full transparency and context, the information is from a Silent Hunter 5 User Chart, and I do not have a manual explaining the proper use of the provided chart which the table is based on.
I could be completely wrong about this, so I am happy to be corrected.

Yes its possible but someone would have to create an app or something similar.
Or you can do a physical disc, but you would need to print out the files.
