Right now my stance on achievements is similar. Trying to 100% everything seriously hampered my enjoyment to a point that I was even apprehensive to pick up a game that would "impact my stats negatively", so at some point I just stopped obsessing about it.
Nowadays I 100% something only if it's within the scope of my skills, when I enjoy a game or when the last few achivs are within reach after a tiny bit of practice. Otherwise I don't bother and I'm happy to just beat a game once and move on. My completion ratio (and eagerness to pick up new games) vastly improved since then
Now for some people it does because that is their life... but for me my life is more about the greater world at large...
You just need to figure out if it actually matters to you or not :-)
