Video have that proportion because it live captured footage from game and not predirected video. It typical for VR games, when gameplay captured from one of eyes directly from headset screen.
But we are working on how to get normaly 16:9 video.
About hands - operate just with only palms it is typical method in today VR games, all attempts to do full body system have an issue in realization. Gamer have only stick that can track position and rotation and that stick in your hands. No any marks for elbows and their twist, it means that gamer will have misposition for other body parts.
