If PlantSims work like regular Sims, gender is decided late.
For most of what you're asking, I'd have to say "cheat." PlantSims are oddball in that they rely on a lot of mechanics that weren't initially intended to be used on Sims. For changing the quality of your Forbidden Fruit, use DebugEnabler from nraas.wikispaces.com . No idea how the quality affects the number of traits you can choose, however. For changing gender, either use the console to enable cheats and then use Create-a-Sim to change it or use MasterController's CAS functions (also from NRaas). No idea on the quality produced by the science station, though.
