The whole guide
First off lets start with what the current problems are with the Vanilla bike the game gives you

The handle bars are too short
the headlight is pushed up
There is a radio on top of the handle bar

yea, its just kinda weird compared to a real bike

so here is the first mod

BIKER BIKE by atacs on Nexus mods
https://www.nexusmods.com/daysgone/mods/251

Pros:
Radio is removed
The frame is better
The headlight is arranged and is lower
Engine 3 is replaced by boozer's engine model
Engine 2 is replaced by Iron mike's engine

Cons:
The new frame texture is bugged
The handlebar is still very short
the radiator is glitched through the frame

Recommended???: kinda

MotorBike_Best Restore by vevoianh0101 on Nexus mods
https://www.nexusmods.com/daysgone/mods/314

Pros:
More parts that can be found on NPC bikes such as dual green saddlebags, The longer handlebars that make the bike look like a real chopper bike, ripper bike modifications, ECT
almost EVERY part that can be found on other bikes can be put on yours

Cons:
The mod is very broken
Almost every single one of the textures on the bike are messed up and broken
A lot of the parts are floating and out of place
The side jet fuels cannot be removed
The rear wheel texture is broken
The mod can glitch and may not be uninstalled

Recommended???: no not really

Now im going to recommend a mod to make the bike have the V-Twin engine sound, the one you can hear on NPC bikes

DeBug cheat menu by KaiHeilos on Nexus mods
https://www.nexusmods.com/daysgone/mods/56

When having the mod installed press CTRL+Backspace on your keyboard which will open up the menu

Go to bike>SetEngineSoundPreset>Enginesound and put the number to 3 which should look something like this EngineSound: 3 and under it will be an "Execute" option and set it to 1 which should look something like this Execute: 1
