I'd also recommend moving the changes to a new file and placing that in 'localisation/replace' for easier updating and compatibility.
Currently you replace the vanilla files completely with your own. That is fine, unless the game updates and those files change or some other mod makes it's edits into those files. Then you would need to copy over the new lines and push an update or make a compatibility patch.
If you move your changes to the replace folder, you won't override the files, just certain localization values, meaning anything else adding stuff to text_l_english and countries_l_english won't break with your mod.
